Check out this 29.0-mile loop trail near Willingen, Hesse. Generally considered a challenging route. This trail is great for camping and mountain biking, and it's unlikely you'll encounter many other people while exploring.
Fantastic, very scenic route from Usseln to Diemelsee (it is almost all downhill). On a flat stretch around the lake, before going uphill to St.Muffert (fantastic view!), Followed by a great trail to Herringhausen. From there you drive back to Usseln, now only uphill.
